i'm wanting to know what size it the biggest (width) i can go with stock 2000 400 ex rims on back tires? without replacing the stock rim and without throwing anything out of wack.

Probably an 11 inch wide tire.

you can get by with a 12 you have to stick with the same height tire though so it wont rub the finders
