Is there much difference between the power of a 350 to a 400?

Yes, about as much as the numbers would indicate.

The 400's have a hydrostatic tranny, and the 350's are gear on gear. What extra power is made by the extra cc's is lost by the hydrostatic inefficiency. If you want a Rancher with more power than a 350, get the 420.

Yes that is good idea. The fuel injection gives it much more power than the extra cc's would suggest.

@Bite N Hold congrats on the Kodiak 400. Good choice and many here would agree.
