Ok I must be stupid because I keep reading about the crush washer on the oil drain plug but I’m having issues. Mine has a washer on it near the bolt head but the inside diameter of the washer won’t allow it to slide past the fat part where the o ring is in order to remove it. I bought a new washer when I bought the oil filter and it will slide past the o ring but then I would have 2 washers on there and I’m afraid the o ring would then be too far “in”. Are there supposed to be 2 washers there? The parts diagram doesn’t show 2. What am I missing?

Are you talking about item #8 here, with o-ring item #40? https://www.partzilla.com/catalog/honda/atv/2007/trx680fa-2a-fourtrax-rincon/front-crankcase-cover

Edit: after finding a video on youtube, it looks like items 13, 29, & 34 here are what you were referring to: https://www.partzilla.com/catalog/honda/atv/2007/trx680fa-2a-fourtrax-rincon/rear-crankcase-cover

I've never seen a Honda use something like that. But it sure looks like your washer should be loose and replaceable. It problably just got compressed on it. I would take a vise grip to the washer, or clamp it in a view, and then turn the bolt to free up the washer.

Yes it’s parts 34, etc that I’m talking about. Next
Time I’ll try twisting it off with pliers per your suggestion. Thanks. I also have a 2004 that is the same way. Am I the only one that has this?

Not a lot of Rincon regulars left here. You could try asking over on the Honda Pioneer forum. The P-700 uses the same motor and tranny as your Rinny.
