like Retro said, , you most likely have a oil temp sensor going south on you, OR the fan control unit is going bad
you can test the oil temp sensor, if thats OK, then its the fan control unit, the MORE costly of the two items
oil temp sensor I think is about 40 bucks, (simple to replace, but suggest doing at an oil change, as it acts like a drain plug, as its screwed into the case like a drain plug, so when you remove it, your going to loose oil?)
and the FAN control unit is also very simple to replace, its just a small black plastic box, you just unplug and replace with new one, but they just cost a lot more
