Hello. I just got 1989 Honda 300. How hard is it to replace the starter, headlight, choke switch assembly on it?

Depends.
The degree of difficulty is directly related to ones mechanical ability.
Easier than an engine rebuild.
It comes down to do you feel capable of doing it.

I done all three of those jobs several times , and didn't find them hard to do , IF , everything goes just right ------ no two jobs are the same , you can do the same exact job two times in a row on two different bikes , you might find stripped screws or a stuck choke plunger

Oh you mean the switch itself? That shouldn’t be too hard but you have to take off the carrier and front fender to get to some of the connectors. A few decent tools the service manual and patience. Squirt all the bolts and screws with Deep Creep first

BTW I circled the alarm unit as well as the cable connector cover—just ignore the alarm unit circle
