You may be able to make your own if you have some knowledge in fabrication. IIRC the old Yamaha Moto4 had a rear disc, you could maybe use the calliper off one of those. There are lots of discs available in so many different sizes.
It has to be possible. As Jeep has said above though, hydraulic has got to be the way forward without a doubt.
