Does anyone know what the probable cause would be for when an ATV seems to have resistance pulling on it slowing down? I imagine it's some sort of bearings that need replacement but which ones?

seeing how you did not tell us which atv this is ?, i'm gonna guess going by your sig ^^ , its a trx300 4x4 ?, chances are, rear brakes locking up ?, or front brakes locking up ?. test this with atv off the ground, spin the front and rear wheels while in neutral, see if they '' free spin '' ?, if not ?, then time to inspect the brakes :).
