Hello I have recently got a 250 recon and it has a new carburetor on it but when it’s warm it idles very high and gives itself gas in gear I’ve set the idling screw and it’s fixed for a minute but does the same thing again it has a huge spring in the carburetor could that be it it stops idling high when you mess with the throttle cable

Sounds like you pilot jet is clogged and it's pulling fuel thru the main jet. Hopefully the new carb is a Mikuni or Keihin, not a $25 job. Also, check throttle cable play, make sure it's not bound up somewhere pulling on the cable, and the slide in the carb is in the correct way.
